Quick fix lunches to go!

No soggy sandwiches for lunch here! These two colourful, super quick fix lunches will leave your tastebuds delighted!

It’s a wrap!

This wrap is possibly the nicest looking, quickest, tastiest sandwich you’re likely to eat for lunch. It’s simple to make, very tasty, with lots of interesting textures. Swap your soggy sandwich for one of these beauties – food should look this good!

Ingredients & Method

1tblsp hummus (See recipe below)
1 tortilla
75g beetroot, chopped
2 tbsp feta, crumbled
handful rocket

Spread hummus on tortilla. Sprinkle on beets, feta & rocket. Roll and eat!

As a more filling alternative you could also add:
3 small falafel
1 tbsp pomegranate seeds
and a tbsp of Tzatziki or full fat greek yogurt, drizzled over…totally tasty!

To make the Hummus:

Ingredients & Method:

300g canned chickpeas
100ml water
2 garlic cloves
34g tahini
2tbsp Extra virgin olive oil
Juice from 1 lemon
1tsp sea salt
pinch of cayenne pepper

Blend all ingredients until smooth. Humus can be kept for a week in the fridge or frozen for later. Can also be served as a snack with vegetable crudités.

Rainbow Buddha Bowl

We all know we should be eating the rainbow and this is a great way to do just that! This actually makes me feel good just looking at it! It’s a really great lunch to keep your taste buds alive and is full of texture and taste. I’ve doubled up on the veggies here, so there’s enough veggies here for lunch tomorrow too, to save you prep time. This is a great recipe to use up whatever vegetables you have left in the fridge.

Ingredients & Method:

200g sugar snap peas, blanched or steamed
200g broccoli, blanched or steamed
1 small carrot, grated
1 small courgette, grated
8 cherry tomatoes, halved
½ yellow/orange pepper, cut into strips
1 handful mixed salad leaves
2 tbsp hummus (see recipe here)
2-3 tbsp mixed seeds
a drizzle of extra virgin olive oil

Put all the vegetables into a bowl or sealed lunchbox. Before serving, top your salad with hummus, sprinkle seeds on top and drizzle with oil. Simple as that!
