Whoever thinks ‘Salads are dull’ hasn’t tried this fresh and fabulous one!
When people say to me “I don’t like salad”, it always makes me wonder if they consider a limp leaf on a plate with a few slices of tomato and cucumber as what equates to a salad…they really ought to try my favourite one below. Vibrant and fresh – its sure to change their minds!
Summery Watermelon, feta and walnut salad (serves 1)
This is such a delicious, fresh tasting, easy to make salad – you know you’re doing yourself a favour just by eating it! Superb on its own or you can serve as a side dish to grilled chicken, seared tuna steak or even smoked mackerel. For me, this is happy food at its best and really tastes of the sunshine!
Ingredients & Method
200g/10 large chunks watermelon
75g feta cheese, crumbled
25g walnuts, chopped
2tblsp olive oil
1tsp nigella seeds
handful baby spinach
handful basil leaves
Freshly ground black pepper
Sea salt
Put watermelon into a bowl. Gently mix in feta, walnuts, olive oil, nigella seeds, spinach and basil. Grind in fresh pepper and a little sea salt. Eat and enjoy!
