I have always believed that breakfast is the most important meal of the day. Start as you mean to go on and eat a nourishing breakfast. It will kick start your metabolism and get you firing on all cylinders in preparation for the day ahead. It’s a common fact that those who eat breakfast tend to be healthier and less overweight than those who skip it.


Oh Fabulous Me’s Gorgeous Granola

Ingredients

200g Gluten Free oats (optional)
150g mixed nuts (eg Brazil, cashew, almonds, walnuts)
50g mixed seeds (eg sunflower, pumpkin, chia, sesame)
1 tsp ground cinnamon
150g dried fruit (eg raisins, cranberrries, prunes, apricots)
2 tblsp runny honey/coconut sugar
2 tblsp Extra virgin olive oil

Method

Heat oven to 180/350f/gas4. Put oats, nuts, seeds, cinnamon on a baking tray. Mix. Drizzle with honey/sugar and oil. Mix again and smooth out. Place in oven for 25 minutes – keep an eye on it as it can burn quickly. Every 5 minutes or so take out & stir. Once granola is golden remove from oven and allow to cool. Add dried fruit.

To serve

I like to serve it with almond milk and the husband prefers his with a couple of dollops of coconut yoghurt.

3 tblsp granola with almond milk or a dollop of coconut yoghurt and a handful of mixed berries or grated apple. Get ready to smash the doors in!
